Storing Sourdough Without Plastic: How Linen Bread Bags Work

You baked a good loaf. The crust cracked properly, the crumb is open, and by tomorrow lunchtime it has gone soft and disappointing in a plastic bag. That is not the bread failing — it is the storage.

Plastic holds moisture against the crust. The crust softens, the loaf sweats, and within a day the texture you worked for is gone. Linen does the opposite: it slows moisture loss from the crumb while letting the surface breathe.

How long bread actually keeps in linen

A crusty sourdough boule holds good texture for two to three days in a linen bag, against roughly one in plastic. It will dry out eventually — that is what bread without preservatives does — but it dries rather than going soggy, which means days three and four are still good toasted.

How to use one properly

Let the loaf cool completely before it goes in. Bagging warm bread traps steam and undoes the whole point. Store the bag at room temperature on the counter, not in the fridge — refrigeration makes bread go stale faster, not slower, because the starch recrystallises quickest just above freezing.

Cut side down on the board, or cut side against the bottom of the bag. The crust protects the crumb; leaving the cut face exposed to air is what dries a loaf out fastest.

Washing

Wash on a cool cycle and line-dry. Skip fabric softener — it coats the fibres and reduces how well the linen breathes. The bags get softer with each wash and last for years.

What else keeps bread well

A woven serving basket is worth having if you get through a loaf in a day and want it on the table rather than put away — airflow underneath stops the base going damp. For anything longer than three days, slice the loaf and freeze it; a frozen slice toasted from frozen is far better than a four-day-old one.
