What Size Banneton Do You Need? Size Chart by Dough Weight

If you are buying your first banneton, size is the only decision that really matters — and getting it wrong is the difference between a loaf that holds its shape and one that spreads into a pancake. Too large and the dough slumps sideways instead of rising. Too small and it climbs over the rim during the final proof.

The short answer: match the basket to the weight of your dough, not to the size of your bowl. A standard 1 kg sourdough boule wants a 23 cm (9″) round. That is the size most home recipes are written for.

Round banneton size chart

Round baskets give you the classic boule with a spiral crust pattern. This is the shape to start with if you bake one loaf at a time.

Oval banneton size chart

Oval baskets (bâtard forms) suit longer loaves and are easier to slice into even sandwich pieces. If you mostly bake for toast and sandwiches rather than for the table, buy oval.

Oval 17×12×6 cm 7″ 350–450 g $14.95 Buy

Baguette forms

These are three-channel forms that proof three loaves side by side. They are a specialist purchase — worth it if you bake baguettes regularly, unnecessary otherwise.

Baguette — three-channel

Baguette 34×10×5 cm 13″ 3 short baguettes $38.95 Buy
Baguette 43×9×5 cm 17″ 3 full-length baguettes $42.95 Buy

A note on inches versus centimetres

Most recipes written in the US call for a “9-inch” or “10-inch” banneton. Rattan baskets are made and sold in centimetres, so 9″ is the 23 cm round and 10″ is the 25 cm. If a recipe specifies inches, use the Approx. column above and you will not go wrong.

Which sizes to buy together

Most bakers end up owning two or three. The combination that covers nearly everything a home kitchen bakes is a 23 cm round for standard boules, a 28 cm oval for bâtards, and one smaller round for half batches. Buying them together costs less in shipping than buying one at a time, and all sizes ship free worldwide.

Caring for rattan

Flour the basket generously before the first use and after every few bakes — rice flour releases better than wheat. Do not wash it. Knock the dried flour out, let it air-dry completely, and store it somewhere with airflow rather than sealed in a cupboard. Treated this way a rattan banneton lasts years and improves as the weave seasons.
